Introduction
An easy-to-make filling for pasta (such as ravioli, manicotti, or lasagna). This will stuff 16 small (2" square) ravioli or 8 large stuffed shells at 1 tbsp per ravioli. Ingredients

2 ounces each of grated Parmesan, Romano, and Mozzarella cheeses (part skim milk).
2 ounces of Ricotta cheese.
Directions
Gently mix all four cheeses together. Stuff your favorite pasta and cook according to pasta directions (included with my related recipe Dan's Old Country Whole Wheat Pasta) plus one or two minutes. Ravioli are done when the majority of them float.
