Introduction

Ingredients

1.5 lbs baby yukon potatoes cut in quarters
10 oz fresh spinach
1 small onion sliced thin
1tsp chili powder
1 tsp salt
2 cloves garlic, crushed
0.25 tsp ground ginger or 1" fresh ginger root, minced
0.25 c water
2 tsp olive oil
Directions
Makes 4 generous portions
Heat oil in a large sauce pan, sautee onion and garlic (and ginger if using fresh root) until onion is soft
add potato, chili powder, salt, ginger powder (omit if using fresh ginger), and water, stir and cook for about 10 minutes. Reduce heat, add the spinach, cover and cook until potato is cooked through. Serve hot.
You can replace the spinach with field greens for an interesting variation.
