Ingredients

    -1 Can of pumpkin (Libby's 100% pure is what I use)
    -1 box of Sugar free, non-fat instant vanilla pudding
    -2 cups Light vanilla soy milk
    -2 tablespoons Pumpkin Pie Spice (more or less to taste)
    -1 tablespoon vanilla extract* (*I have not tried this because I ran out of vanilla, but I added a little sugar-free Carmel syrup and vanilla vodka before and it was delicious!)

Directions

Combine pumpkin, pudding mix, and 1 cup soy milk into mixer. Blend until smooth, adding second cup of soy milk until pudding is at rich, creamy consistency (may require more/less soy milk depending on preferred texture). Add in spice slowly, taste after 2 tablespoons (add in another if more spice is desired). Blend on high speed to whip until creamy.

Makes about 3.25 cups of pudding, separated into 6 servings of 1/2 cup (with a little extra). Only 75 calories per serving!

    What size can of pumpkin? And a large or small box of pudding? Not truly "dairy free" because the dry pudding mix has milk solids in it, but might be a nice treat for others. - 9/10/09
