Introduction

A variation on an Anne Lindsay recipe. A variation on an Anne Lindsay recipe.
Number of Servings: 8

Ingredients

    Pasta, penne, 250 grams dry
    Broccoli, one big bunch, stems peeled and chopped and florets
    Tomatoes, fresh, 3 small, chopped
    1/4 English cucumber, thinly sliced
    2 green onions, thinly sliced
    Olive Oil, 3 tbsp
    Tarragon vinegar, 1 tbsp
    Dijon Mustard, 1 tsp
    Sun Dried Tomatoes, one tbsp, finely chopped
    Fresh basil, chopped to make 2 tbsp or to taste
    salt and pepper

Directions

Bring a large pot of salted water to boil, add penne and boil for 8 minutes, add broccoli and bring back to a rolling boil. Drain all in a colander, and rinse with cold water. Drain again and put in a mixing bowl. Add the remaining ingredients, toss lightly, and chill for an hour before serving.
