Ingredients

    Non-stick Spray
    ! Tbsp. canola oil
    1 large red onion
    1 clove garlic chopped or pressed
    1/2 cup red pepper chopped
    1 small oven fried eggplant
    10 sun dried tomatoes (no oil)
    1 vegetable soup cube or 1 Tbsp. powder
    2 cups boiling water
    1 cup rinsed quinoa
    1/4 cup chopped flat leaf parsley

Directions

Eggplant: line a large baking tray with aluminum foil and spray with non-stick spray. Slice the eggplant and place on tray. Spray the eggplant. Cook in oven 350 degrees until it begins to brown. Remove and cool.

Spray a pot and add canola oil. Saute onion, pepper, garlic and tomatoes until onion is clear. Add eggplant and saute mixture for a few minutes. Meanwhile rinse quinoa until the water runs clear. Drain quinoa. Boil water and add soup cube/powder, mix. Put soup in pot with vegetables. Add drained quinoa and parsley let mixture come to boil, lower heat and cook in covered pot for 15 minutes. Leave the quinoa to stand for 5 minutes before serving. Non-vegetarians can sprinkle mixture with a bit of low fat grated cheese.

Note: I always spray a pot/pan before adding a small amount of oil because it prevents the oil from being absorbed into the pot when heated.
