A light crisp salad full of protein. A light crisp salad full of protein.
Number of Servings: 4


    2 Tbsp Lemon Juice
    2 Tbsp Orange Juice
    2 Tbsp Brown Mustard
    1 Tbsp Brown Sugar
    1 Can (5 Oz.) Tuna Fish in water/drained
    1 Can (15 Oz) Black Beans rinsed and drained
    10 Olives halved
    4 heaping cups of Spinach


Whisk together juices, mustard and brown sugar. Mix in Tuna, beans and olives. Place a heaping cup of spinach on each plate and place 1/4 of tuna mixture in center of greens.
