Introduction

Number of Servings: 1

Ingredients

    1 chicken breast
    Soy sauce
    1/2 Onion
    Bean Sprouts
    2 Eggs
    Milk

Directions

Chop the onion and dice the chicken breast into small cubes.

Place the chicken and onion in a frying pan and add Soy sauce until the chicken and onion are lightly coated.

Fry on a light heat for several minutes until the meat is sealed.

Add the bean sprouts and half a cup of soy sauce and simmer on a medium heat for 10 minutes.

Take the 2 eggs and a little milk and beat them until they are bubbly. Add a small amount of salt and pepper to taste.

Pour the eggs into a non stick pan and cook until a light brown on both sides (grill the top if you can't flip it lol).

Place the egg on the plate and spoon the Chicken into the omelet. Fold the top over and enjoy.

Can be served with rice or cous cous.

    Good
    Great idea...the sodium was way too high for me so I substituted 1/2 c chicken broth to simmer in & used lite soy sauce instead. I ended up mixing everything together & making an egg foo yong type of thing...very tasty! - 4/18/07
