Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, .5 cup, chopped
    Shrimp, raw, 16 oz
    Green Peppers (bell peppers), .5 cup, strips
    Garlic, 2 cloves
    Oregano, ground, 1 tsp
    Salt, 0.25 tsp
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
    *Lemon Juice, .5 fl oz
    Whole Wheat Spaghetti, cooked (pasta), 2 cup

Directions

1. Heat oil in a medium skillet
2. Add onion and cook for 10 minutes
3. Add shrimp, bell pepper, garlic, oregano and salt
4. Cook for 5 minutes more
5. Stir in tomatoes and lemon juice
6. Cook until heated through.
7. Season to taste with freshly ground pepper and salt.
8. Serve immediately over hot cooked pasta.
