Introduction

These are an easy, light dessert for those warm summer days. For chocolate lovers, eliminate the lemon and add 1/2 c. melted semi-sweet chocolate chips and 1/2 tsp. vanilla; combine thoroughly and fill strawberries. Ingredients

    8 oz. reduced fat cream cheese
    1/3 c. sugar
    1 lemon
    1 qt. strawberries
    6 graham cracker squares

Directions

Clean and hull strawberries and slightly hollow out (I use a Cook's Corer that I purchased from Pampered Chef...works perfectly!). Place crackers in large zip lock bag and crush with rolling pin.

From lemon squeeze out 2 tsp. lemon juice and zest 1/2 tsp. Beat together cream cheese, sugar, juice and zest (you may use powdered sugar, but I use Florida Crystals).

Using either a pastry bag and tip or a quart size freezer zip lock bag that you've snipped one corner off of slightly, fill the bag with the cream cheese mix. Fill each berry and roll top in cracker crumbs.
