Ingredients

    3/4 lb lean ground beef
    2 onions, chopped
    4 cloves garlic, minced
    1/2 tsp ground ginger
    2 tbsp soy sauce
    1 (10 oz) pakckage frozen spinach, thawed
    3 eggs
    1/4 cup milk
    1/3 cup grated parmesan cheese

Directions

1. In large skillet, crumble ground beef. Cook and stir over medium heat for 3 minutes. Add onion and garlic; cook and stir until beef in browned and veggies are crisp-tender. Drain well.
2. Drain spinach thoroughly and add to skillet along with ginger and soy sauce; cook and stir for 2 minutes until hot.
3. In small bowl, combine eggs, milk, and chees and beat well. Add to skillet; stir-fry until eggs are cooked and set. Serve immediately.

    This is great! Very easy to make, and very yummy. My husband liked it too. I served it over whole grain brown rice, and it was VERY filling. - 8/7/10
