A quicker, easier, lighter version of one of my all-time favorites! A quicker, easier, lighter version of one of my all-time favorites!
Number of Servings: 16


    2 medium eggs
    1 cup nonfat milk
    2 bags Ore Ida Steam 'n Mash Cut Sweet Potatoes
    4 T ground Cinnamon
    2 T Vanilla Extract
    3/4 cup Splenda
    1/3 cup Calorie-free Buttery Spray

    1/4 cup Whole Wheat Flour
    1/2 cup Light Brown Sugar
    1/2 cup chopped pecans
    1/3 cup Calorie-free Buttery Spray


Cook potatoes per package instructions. In large bowl, mix first 7 ingredients together until fairly creamy (will still have some chunks). Pour into a greased 13x9" pan and smooth top with a rubber spatula.

In a separate bowl, mix together topping ingredients and spoon mixture across top of sweet potatoes.

Bake at 350 for about 20 mins until topping is crunchy.

Each serving is about a cup!
