Introduction

I first made this recipe to dehydrate for our backpacking trip. In that instance, I made sure the ground beef was very lean and crumbled into small bits, I mashed the black beans before adding them and minced the celery so it would dehydrate well and rehydrate successfully in camp. Ingredients

    1/2 pound lean ground beef
    2 large stalks of celery, dced
    1 - 14.5 oz can diced tomatoes
    1 - 10 oz. can black beans (do not drain)
    1 - 16 oz can Rosarita traditional refried beans
    1 - 10 oz can Old El Paso medium enchilada sauce
    Chili powder to taste
    splash of lime juice

Directions

Saute ground beef. Add all other ingredients and simmer for at least an hour. Can be spiced up or down by the addition of hot sauce or other peppers, or the exchange of medium for mild enchilada sauce without changing the nutrition content much. Makes about 12 ample half-cup servings.
