Introduction

Ingredients

    Preheat the oven to 350 degrees and grease muffin pan with cooking spray.

    Flour, whole grain, 1.5 cup
    Brown Sugar, .5 cup, packed
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    whisk together above ingredients, set aside

    Banana, fresh, 1 cup, mashed
    Egg, fresh, 1
    Canola Oil, 5 tbsp
    Flax Seed Meal (ground flax), 6 tbsp
    Dannon Lowfat Vanilla Yogurt, .25 cup
    Vanilla Extract, 1 tsp
    pure almond extract, 1 tsp
    Mix above wet ingredients until smooth. Gradually add flour mixture and stir until blended. Add 1/3 cup sliced almonds and mix thoroughly.

    Fill muffin cups three-quarters full.

    Bake until a toothpick inserted comes out clean - about 20 minutes.

    The muffins are really good, easy to make, flavorfull and now I make them regularly. Can be frozen too, they are great for a quick breakfast. - 10/11/09

    thanks! are you freezing the batter or the baked muffins? I need to explore freezing baked goods and dough.

    actually there's a half cup of brown sugar. If you made it without and it tasted good I may have to try cutting down the amount!
