Introduction

A refreshing salad with warm hints of curry spice mingling together the sweetness of mango and the licorice of fennel to the crispy coolness of Jicama. Number of Servings: 4

Ingredients

    2 Mangos, firm but ripe;peeled and cubed to make 2 Cups
    1 Jicama, peeled and julienned into thin strips to make 2 Cups
    1 Fennel Bulb, diced to make 1 Cup
    1 TBS of sweet Curry powder.
    Juice from 3 limes (about 1/4 Cup.
    Salt and pepper to taste.

Directions

Makes approximately 4 servings of 1 1/4 cups each.

1) In a large bowl, combine mangos and fennel.
2) Add lime juice and Curry powder. Mix well.
3) Fold in julienned Jicama.
4) Add salt and pepper to taste.

Cover and marinate in the refrigerator for at least 30 minutes before serving.
