Ingredients

    1 lb ground beef
    1 can tomato soup
    1 can rotel or 1/2 cup salsa
    1/4 to 1/2 cup water
    6 flour tortillas cut into 1" pieces
    1/2 cup shredded cheddar or mexican style cheese

Directions

1. Cook beef in 10" skillet until well browned, stirring to break up meat. Pour off fat.
2. Stir in soup, rotel, water and tortillas, cumin and cilantro. Heat to a boil. Reduce heat to low-medium and cook for 5 minutes. Stir. Top with cheese.
Makes 5- 1 cup servings

    Very Good
    Easy and good! I added chopped green onions plus a can of pinto beans for more fiber. I also substituted corn tortilla chips for the flour tortillas because of a gluten allergy in my family. This will easily be one of our favorites. - 6/5/10
