Introduction

Ingredients

3 cans black beans, drained and rinsed
1 can diced tomatoes (or 2 large fresh diced)
1 can sweet corn
1 small can sliced black olives (optional)
2-3 jalepenos or chipotle peppers if you have them, minced
1 tsp. cumin
about 8 corn tortillas
a little bit of olive oil
about 4 oz. light cream cheese
1 cup shredded "mexican" style cheese
Directions
Put a little bit of olive oil in a deep sauce pan and saute onions until they are translucent.
Add the tomatoes and peppers and stir for about 5 minutes
Add the beans, sitr for another 5 minutes
With a potato masher mash some of the beans to give it a more smooth texture, but leave some whole
Add the corn and the olives and stir some more
Cut up your tortillas into strips or triangles and lightly toast them in a pan with some oil.
Once your black bean mixture is mixed up and and hot, line the bottom of a round casserole dish with half the tortilla strips. As gently as possible spread the cream cheese on overtop the tortillas (it will be semi-difficult but don't worry if you end up smooshing the tortillas up some).
Add the black bean mixture, top with the rest of the tortillas and then put the cheese on top.
Cover with foil and bake for 20 minutes. Take off the foil and bake for another 10 minutes or until it's lightly brown on top.
Serve and enjyo :)
