Ingredients

    2 tbsp canola oil
    1.03 Pounds skinless chicken breast (trimmed)
    1/2 yellow (or any color) bell pepper-diced
    1/2 onion diced
    Chili Powder to taste

    Combine ingredients into a bowl and let marinade in fridge 2-6 hours, depending on if you're home all day or out all day.

    Can be used in any mexican dish made with chicken, or eaten plain if low-carb

Directions

I assume this would be prepared best in a skillet on the stove, although I'm all for creativity!
