Introduction

Ingredients

    3 cups zucchini, chopped
    1/2 cup onion, chopped
    1/2 cup Bisquik
    4-6 eggs (I use 5)
    1/2 cup canola oil
    1/2 cup parmesan cheese
    salt, pepper, parsley to taste

Directions

Pre-heat oven to 350
Spray and flour a 9" pie plate
Mix everything together, pour in a 9" pie plate
Bake for 40 minutes
Cut and enjoy. Serves 8

    Good
    I would cut down on the onion the next time I made this. It's more "eggy" than a spinach pie I used to make with bisquick and that might take me a bit to get used to. But still good. I added a couple of chopped sundried tomotoes for more flavor. - 10/4/09
