Ingredients

    Whole Wheat Lasagna
    2T Olive Oil
    4cups of veggies(zuchinni,carrots, onions,peppers,spinach)
    Ricotta Cheese 8oz
    Parmesan Cheese 4oz
    4 eggs
    Mozzeralla cheese
    White Sauce-
    2cups milk
    4 T flour
    4 T butter
    salt & Pepper

Directions

Cook lasagna noodles according to instructions on box.
Make white sauce- put milk & flour in shaker jar & shake until smooth. Put in sauce pan & cook over low heat stirring, add the butter & cook until thickened. Remove from heat & add Parm cheese(salt & Pepper to taste)
Add eggs to Ricotta cheese in a separate bowl & mix with fork until smooth. Saute the veggies in the olive oil until tender.
Spray a 9x13 pan & put in a layer of noodles, a layer of cheese mixture, a layer of veggies, a layer of white sauce & sprinkle with mozarella cheese. Continue with another layer ending with pasta on top. Top with Mozarella cheese. Cover & bake for 50 min. Serves about 8
