Introduction

You can make this recipe with basil or cilantro, and with any kind of nut (the original recipe called for pine nuts--I used walnuts). Great on plain rice crackers or thin with water or lemon juice and put over rice pasta as a cool summer sauce. Ingredients

    3 cups fresh basil
    1/2 cup chopped walnuts
    1/4 cup olive oil (I use extra virgin)
    1/2 cup grated Italian cheese (I use Pecorino Romano)
    2 tsp minced garlic



Directions

Combine all ingredients in a food processor until smooth. Thin with water or lemon juice until you get the texture you want (paste for spreading, sauce for pasta).

Makes about a 1 cup of pesto, 16 tablespoon servings
