Introduction

A great way to use up bagged coleslaw that is nearing its expiry date. Our supermarket marks it way down, so I buy several bags, and turn it into soup. Ingredients

    6 Cups Water
    1 Cup Uncooked White Long Grain Rice
    1 454 g bag Compliments Cabbage & Carrot Blend Coleslaw
    I can (796 ml) Aylmer Diced Tomatoes with Italian Spices
    2 Tbsp White Vinegar
    Black Pepper (to taste)

Directions

Bring 6 cups of water to a boil. Add rice, boiling until rice is almost cooked. Reduce heat to medium and add coleslaw. Continue cooking until tender. Add tomatoes, garlic, vinegar, salt and pepper and stir. Reduce to low and simmer about 10 minutes. Makes 12 cups.
