Ingredients

    1 c zucchini - chopped
    1/2 c canned black beans - rinsed and drained
    2 tsp olive oil
    1 tsp cumin
    2 whole wheat tortillas
    1/4 c cheddar cheese - shredded
    2 tbs salsa

Directions

* Saute first 4 ingredients for 5 minutes
* Place mixture on tortillas and sprinkle with cheese
* Fold in half and cook in pan until cheese melts and tortilla is toasted.
* Top with salsa

    The cumin was a nice addition but it needs more cheese as it was a little dry. I'd make this again with some modifications. - 9/1/09

    I am going to try this out for supper tonight on my husband. I 'm not crazy about zucchini but if hubby likes it then I'll try it! - 8/30/09
