Ingredients

    2.5 cups black beans, 1 cup corn, half a large jicama, juice of one lime, dash of chili powder and pepper, 1/2 tsp salt, 1 tbps red wine vinegar, 3/4 tbps cumin, 2 tomatoes, 2 med red bell peppers, and 1/4 of a med red oninon.

Directions

Cut up all ingredients and mix together and allow to stand for at least 2 hrs before eating.

    The recipe was very good; I served it with our Mexican meal tonight in celebration of Cinco de Mayo. The only thing I noticed was that the serving size wasn't listed, so the nutrition is for the whole large bowl. I measured approximately 6 (one cup) servings of this as a serving. - 5/5/10

    I think the problem with the calorie count is the number of servings--this should easily feed 6 people which would then make the calorie count 180 per serving and only about 260 mg sodium. If you feed 4 people, it's 270 calories. - 6/30/11

    This has to serve more the one person, and the calorie count has to be off. Otherwise there is NO WAY I'm eating this! It's all I could eat for the day. - 5/22/10
