Introduction

Ingredients

    1 egg, 1/4 c flour, 1/2 c wholewheat flour, 1/4 c ground flax, 1/2 c apple sauce, 1/5 c milk, 1.5 tsp canola oil (plus a canola oil cooking spray), 2 tsp sugar, 3 tsp baking powder, 1/2 tsp salt & 1 tsp cinnamon

Directions

Beat one egg in a bowl until whipped light and fluffy, then add all remaining ingredients with the exception of the canola cooking spray (equivalent of 1.5 tsp in recipe ingredients). Mix together into batter and cook in frying pan the way you would pancakes. Use the cooking spray sparingly to keep the pancakes from sticking. This recipe calculates 1.5 tsp of canola oil used for the cooking of the pancakes in the frying pan. Makes approximately 9 - 3.5 inch diameter pancakes. 1 pancake is a serving. Serve immediately or can be frozen and reheated for a later meal.
