Introduction
NOTE: Number of servings is a guesstimate; I measured mine but not the kids' or the large amount still left over. This recipe is a first attempt to lighten up a recipe our daughter learned and loved in her cooking class at camp this summer. Clearly, there's more that can be done to lighten it up, but the kids ate it and liked it, and I think it still beats the blue box stuff for taste and nutrition. Ingredients

1/2 lb elbow macaroni
4 Tbsp butter
2 large eggs
6 oz evaporated fatfree milk
1 tsp kosher salt
1/4 tsp ground white pepper (or to taste)
3/4 tsp dry mustard
10 oz reduced-fat sharp Cheddar
Directions
In a large pot of boiling salted water, cook the pasta to al dente and drain. Return pasta to the pot and melt in the butter; toss to coat. Beat together the eggs, milk, salt, pepper and mustard. Stir egg mixture into the pasta and add the cheese. Stir over medium-low heat for 3 to 5 minutes or until cheese melts and sauce becomes creamy.
