Ingredients

    1/2 cup chopped onion
    1/2 cup chopped celery
    1/2 tsp. olive oil
    2 cups water
    1 can (14.5 oz.) diced tomatoes (or about 2 cups)
    2 Tbsp. ketchup OR 2 Tbsp. cocktail sauce if you like it more spicy
    1/2 tsp. salt
    1/2 tsp. curry powder
    1/4 tsp. Tabasco Sauce
    6 oz. raw shrimp, shelled and deveined
    6 oz. bay scallops
    6 oz. orange roughy, cut into bite-size pieces

Directions

Makes about four 1 1/2-cup servings.

In a 2-qt. saucepan heat the olive oil; add celery and onions, stirring to coat. Turn heat to medium-low, cover pot and let cook about 5 minutes.

Add water, tomatoes, ketchup, salt, curry powder, and Tabasco. Bring to a boil. Reduce heat to low, cover and let simmer for 30 minutes.

Add shrimp, scallops, and fish to pot. Let simmer another 10 minutes.

I think this is yummy served over a scoop of rice. (Not calculated in the nutritional values.)

    Looking forward to trying this recipe over the weekend! Time of the season for something great tasting!

    Added one diced potato, some basil and parsley flakes, and used chicken broth in place of the water, very yummy!
