Introduction

A condiment for toast, a lot like apple butter, except made with pears. Recipe adapted from the Ball Canning book.

Ingredients

    2 Quarts Pear pulp (about 20 medium)
    4 cups sugar
    1/3 Cup lemon juice
    1/2 tsp nutmeg, ground
    1/2 tsp cinnamon, ground

Directions

Quarter, core and peel pears. cook until soft, adding only enough water to prevent sticking. Use a stick blender, to mas the pears into a pulp.
Add remaining ingredients; cook until thick, about 35 min. As mixture thickens, stir frequently to prevent sticking. Pour into hot jars, leaving 1/4-inch head space. Adjust caps. Process pints and quarts 10 minutes in a water bath. Yield: about 4 pints
