Introduction

Got this from a friend at church. OH MY GOSH! The best pecan pie recipe I've EVER tried. And so EASY! Got this from a friend at church. OH MY GOSH! The best pecan pie recipe I've EVER tried. And so EASY!

Ingredients

    1 uncooked pie shell [Robin's note: Or make a homemade one w/ butter crust]
    1 c. sugar
    1/4 c. dark corn syrup
    1/4 c. oleo or butter (melted)
    3 eggs - well beaten
    1 c. pecans - chopped [Robin's note: Toast the pecans first]

Directions

Combine sugar, syrup & melted butter/oleo, eggs and stir well. Mix in pecans. Pour into uncooked pie shell...moisten the edges with a little water with your fingers to prevent burning. Put on a foil lined cookie sheet just in case of spillage. Cook for about 40 minutes...Check at 30 minutes. Cook till it doesn't jiggle so much in the middle. It will harden a bit upon removal.

    This sounds so easy and the calories are better than most. I would put the pecans on the top rather than inside but I will try this way to see. - 12/27/09
