Introduction

Creamy vegan Alfredo pasta sauce using this almond and cashew based cream substitute. Adapted from the MimicCreme website, original recipe credited to Tracy Thompson. I had to add cornstarch for thickening and nutritional yeast for protein, and a smidge of paprika (I used smoked) and magnifico! Ingredients

    2 cups MimicCreme (unsweetened)
    1/3 cup Earth Balance Buttery Spread
    4 tbs vegan Parmesan cheese (Galaxy)
    4 tbs nutritional yeast
    3 cloves garlic, crushed
    dash paprika
    salt to taste

Directions

Melt margarine in large pan, add garlic and allow to cook until light golden brown. Stir cornstarch into 1/2 cup of the MimicCreme and set aside. Add MimicCreme to pan and whisk until margarine begins to incorporate into MimicCreme. Now stir in reserved MimicCreme with the cornstarch and stir under low to medium heat until thick and bubbly. Add nutritional yeast, paprika and vegan Parmesan cheese and stir until blended. Heat through, then add to drained pasta (4 portions, cooked). Serve Immediately. (I made 1 portion (2 oz) of Dreamfield's Spaghetti at 190 cals and served with a generous 1/3 cup of this lovely sauce on top.) Sprinkle with paprika as garnish.
