Ingredients

    2 lbs pork tenderloin-trimmed and cubed
    1 med onion (minced)
    3 garlic cloves
    1/4 tsp cumin
    1 tsp seasoning salt
    1/2 tsp pepper
    4-6 roasted green chilis-cut into 1 inch pieces
    1 cup tomatillos -quartered
    1 can "rotel" diced tomatoes and green chili
    1 tsp salt
    2 cups water



Directions

Season pork with salt & pepper. Add flour and pork cubes to large zip lock bag and shake to coat. Heat oil in pan and add pork. Saute for 5 mins browning all sides. Remove pork from pan and add to crock pot. Using same skillet, cook onions,garlic, green chilis & tomatillos for about 8 minutes. Add to pork in the crockpot. Add remaining ingredient-can of rotel, cumin, salt and water. Cook on low for 6-8 hours. (you can mix 2-3 tsp of flour with water, to thicken the chili). If chili is too chunky you can put it in a food processor. Makes 8- 1 1/2 cup servings.
