Ingredients

    1 large onion, chopped
    1 small head cabbage, coarsly chopped
    6 medium red potatoes, unpeeled, cubed
    3 carrots, sliced
    3 cloves garlic, minced
    4 tbsp gingerroot, minced
    1/2 cup vegetable broth
    1 1/2 tsp soy sauce
    salt and pepper to taste
    1/4 cup fat free sour cream

Directions

1. Saute onion, cabbage, potatoes, carrots, garlic, and gingerroot in lightly greased large skillet until lightly browned, about 8 minutes. Add broth and soy sauce and cook, covered, over medium heat until vegetables are just tender, about 5 minutes. Seeason to taste with salt and pepper. Serve with sour cream.

    Very Good
    I liked this and will make it again. I need to get a bigger skillet to make it. It took longer than it said to get the vegetables done but might have been my skillet. Doesn't really need the sour cream but it was good with it, so it would work for vegans. - 5/11/10
