Introduction

I created this recipe off of other recipes that I felt were pretty bland. My husband normally loves my potato salad. I knew I needed to perfect the healthier recipe to get him to eat it without complaining about the substitutes. Needless to say he loved it. I created this recipe off of other recipes that I felt were pretty bland. My husband normally loves my potato salad. Ingredients

    3 (med) Red Potatoes

    Dressing:
    1/4 cup Mountain High All Natural Low Fat Yogurt - Plain
    3 tsp Dijon Mustard
    2 tbsp White vinegar
    3 portion servings EGG WHITES (All Whites 100% liquid egg whites) (cooked and chopped)
    1 chopped Dill Pickle 1 large (4" long)
    1 stalk of chopped Green Onions (raw)
    1 chopped Celery (one stalk)
    3 tsp French's Classic Yellow Mustard
    1/2 cup Best Foods Reduced Fat Mayonnaise
    1/4 tsp Kosher Salt
    1/2 tsp Black Pepper (Ground)
    2 tsp Dill weed (dried)

Directions

Boil Red Potatoes.

While potatoes are boiling mix together dressing.

Once potatoes are tender and cooled, chop into cubes. Add to dressing and mix toughly. Season as needed. Feel free to change it around to your liking. =^)

Serve chilled. (8 servings)
