Ingredients

    2 cups whole wheat bread crumbs
    2-3 sweet potatoes, peeled
    4 3-4oz white fish fillets, like grouper or tilapia
    1/2 tsp cajun seasoning
    sea salt and black pepper to taste
    2 egg whites

Directions

Use a mandolin to slice sweet potatoes into very thin slices. Lay slices on a baking sheet with a bit of olive oil and salt (can also add cinnamon sugar for a different flavor, but it's more calories!) Bake at 350 for 8 minutes, reduce oven to 250 and bake 5 minutes more or until slightly browned and crisp. Makes about 4 cups.

Season bread crumbs with cajun seasoning, salt, and pepper. Dip filets into egg whites then roll in breadcrumbs and place on baking sheet (lightly sprayed with olive oil). Bake for 6-10 minutes. Serve each filet with 1 cup chips.
