Ingredients

Fat free Cream cheese
splenda
egg white
vanilla extract
Vanilla wafers
Directions
Makes six mini cheesecakes
Heat oven to 325.
Let cream cheese come to room temp ( easier to mix then)
Line a muffin pan with baking cups. Put a vanilla wafer in each tin
Blend the rest of the ingrediants together in a blender or by hand. Pour /divide the mixture evenly between the six muffin tins.
Bake for 15 minutes, if middles aren't done. Turn the oven off and let them finish in the oven.
I want to experiment with adding a bit of DaVinci sugar free syrups ( Amoretto, Kahula, Irish cream) on the recipe to see how it turns out . Also I haven't tried it with lower fat wafers to see what it is like. If anyone does before me, let me know how it turns out!
