Ingredients

    3 cloves garlic
    1 onion
    28 oz can diced tomatoes, juice included
    10 oz can chicken or vegetable broth
    1/2 cup salsa
    4 cups spinach
    1 tsp sugar
    1/2 tsp pepper
    1/2 tsp oregano
    3 oz feta cheese (optional)

Directions

Makes 6 1-cup servings with 0.5 oz feta cheese each

Fry onion and garlic until soft
Add tomatoes and broth, bring to a boil
Add salsa, spinach, sugar and spices. Cook until spinach wilts.
Crumble feta on top if desired when serving.
