Ingredients

    1 lb ground turkey
    1 cup beef broth
    1 can diced Italian-style tomatoes
    8 oz bowtie pasta (farfalle)
    2 cups sliced zucchini
    1/2 cup grated Parmesan cheese

Directions

Heat a heavy nonstick skillet over medium high heat. Cook ground turkey 6-8 minutes, stirring frequently, or until no longer pink. Remove turkey with slotted spoon and discard drippings. In same skillet, add stock, tomatoes and pasta, pushing pasta into liquid. Bring to a boil. Reduce heat to medium and cook, uncovered, 10 minutes, stirring frequently. Add zucchini. Continue cooking 5 minutes or until pasta is tender. Return turkey to skillet and stir in half the cheese. Cook until heated through. Sprinkle with remaining cheese.
