Introduction

Number of Servings: 8

Ingredients

    4 boneless skinless chicken breasts
    6 cups water
    3 celery stalks, chopped
    1 clove garlic
    1/2 t. salt
    1/4 t. pepper
    1 bay leaf
    2 large carrots, peeled and sliced
    1 1/2 T. Italian Seasoning, crushed
    1 1/2 Cups sliced veggies (broccoli, zuchini, fresh beans, etc)
    1/2 C. dried lentils
    1 C. shell pasta
    1 - 15 oz can diced tomatoes
    1/2 can tomato paste

Directions

Place first 9 items in large pot. Bring to boil and simmer for 30 minutes. Remove and chop chicken and return it to pot. Simmer another 30 minutes. Add veggies, lentils, tomatos and tomato paste and simmer for another 20 minutes. Put in pasta and cook the remaining 15 minutes or until pasta is tender. Remove bay leaf before serving. Serves 8 people
