Introduction
This is something I throw in the slow cooker and provides me with meals for the rest of the week. I just put it into containers and freeze them. Ingredients

1.5 tbsp olive
1 large onion
2 cups sliced mushrooms (or one pack of sliced mushrooms)
1 green pepper
1 red pepper
5-6 cloves of garlic, minced
1 pkg veggie ground round
1/2 can of tomato paste
2 19oz cans of diced tomatoes
2 19oz cans of beans, drained (your choice, I usually do a 5 bean medley and lentils)
5 bay leaves
3 sprigs of fresh rosemary
3 sprigs of fresh thyme
chili powder and cayenne to flavour
cinnamon (optional)
Directions
- Heat oil in pan.
- Add onions, peppers, garlic and mushrooms. Cook until almost tender. Take off heat and put in slow cooker.
- Add all remaining ingredients and mix.
- Turn slow cooker on to medium and cook for 3 hours.
Makes 10 servings
