Number of Servings: 6

Ingredients

    1.5 cups of long grain rice
    5 tablespoons of coarsely chopped fresh cilantro
    1.5 limes, juice
    Zest of 1 lime

Directions

1. Prepare the rice according to package directions.
2. While still very hot, stir in the margarine, cilantro, lime juice and zest.
3. Stir thoroughly.
4. Can serve immediately, or allow to wait several hours for the flavors to meld. If you wait, re-heat on the stove or in the microwave.

Serves 6.
