Introduction
Quick and easy stove top soup. It took about 15 minutes total to prepare and cook. I used the no salt added diced tomatoes and chicken bouillon to keep the sodium content low. The small amount of goat cheese adds a lot of flavor without upping the fat content too much. Quick and easy stove top soup. It took about 15 minutes total to prepare and cook. Ingredients

4 cups water
4 tsp no sodium chicken bouillon granules
1 14.5 oz can no salt added diced tomatoes
2 cups fresh spinach, ripped into pieces
1 stalk of green onion, diced
1 oz goat cheese
2 tbl salsa (optional)
Directions
Bring water to a boil and add the chicken bouillon. Add the diced tomatoes, spinach and onion and return to a boil. Add seasonings to taste. I used: salt, pepper, garlic powder, cayenne pepper, basil and oregano. Add salsa (optional). Add goat cheese to pot just before serving, stirring until melted.
Serve with bread or crackers. I had a Hearty Wasa cracker with some additional goat cheese spread on it ;)
I think this would also be good if you added a can of white beans, but I didn't have any on-hand.
