This recipe is for SIX large muffins. You could also make 12 normal-sized muffins at 143 calories a piece. Please note that they are high calorie because they have great, clean sources of fiber, complex carbs, and protein. There is no oil. They have nuts and flax instead! Yum, yum! Ingredients

    1.5c whole wheat flour
    1.25 t baking powder
    .5t baking soda
    .5t ground cinnamon
    .125t salt (1/8t)
    2 slightly beaten egg whites
    3 med ripe bananas, mashed
    .75c sucanat (or you can use honey or agave and reduce the banana so they aren't wet)
    .5c ground almonds
    .25c ground flax seeds

Directions


Combine flour, powder, soda, cinnamon, and salt in a medium mixing bowl

Combine remaining ingredients in a separate bowl. Stir dry mix into wet mixture until just moistened. Spray the muffin tin with nonstick spray or use liners.

Bake at 350 20-25 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then cool on a wire rack!

    Very Good
    These are so easy for a quick breakfast. I make 12 small ones and add some protein powder. I used the honey and wrapped them up individually when they were done. My husband and I can just grab them on the way out. Super good with a nice cup of coffee. - 7/21/11
