Introduction

Number of Servings: 6

Ingredients

    1/2 small can of black olives (or more if you like them a lot)
    1 small can of green chilies
    6 oz of grilled chicken breast, cubed
    1/4 cup of chopped cilantro
    1 1/2 cups of cheddar jack cheese, reduced fat
    6 corn tortillas
    1 can of old elpaso enchilada sauce (mild or medium)

Directions

Preheat oven to 375 degrees. combine cheese, black olives, green chilies, chicken and cilantro in a bowl. Poor half of the enchilada sauce in a baking dish. Fill tortillas with all but 1/2 cup of cheese mixture and place seam side down in dish, side by side. Poor remander of enchilada sauce on tortillas. Sprinkle remaining cheese mixture on top and bake for 20 min.
Makes 6 servings

Options: I like to serve with shredded lettuce topped with diced tomato and onion, and reduced fat sour cream.
