Introduction

I like the taste - bit tart to relieve the boredom. However it looks rather like mush, so I think I will use the leftovers as a stuffing for green bell peppers, to make it prettier (and some grated cheese on top for my non-dieting husband! Ingredients

    3 squares Chang's vermicelli rice noodles
    350g Ground beef
    190g can champignon pieces and stems
    1 cup onion, chopped
    50ml olive oil
    300ml carton sour cream, light
    2 tspn Worcestershire sauce
    3 cups V8 vegetable juice

Directions

1. In large heavy saucepan, saute onions in oil until tender, then add meat and brown.
2. Place noodles in a layer over meat
3. Combine V8 and Worcestershire sauce, and pour over noodles
4. Bring to a boil, then cover
5. Simmer over low heat for 30 minutes.
6. Stir in sour cream and mushrooms, and bring to boil
7. Serve hot

    I'm going to try this, but to prevent mush, try cooking rice noodles per pkg directions and just add them to the recipe right before serving. Always looking for gluten-free recipes! - 6/25/10
