Ingredients

    1 tbsp olive oil
    1.5 lbs chicken breast, chopped
    5 cloves garlic, minced
    1 tbsp cumin
    1 tsp ancho
    1 tsp cayanne
    2 cans tomatoes with chilies (20oz total)
    1 cup salsa
    3 chilies in adobo sauce, chopped
    1 15.5oz can kidney beans
    1 10oz box frozen corn
    1 tbsp corn starch
    1 tbsp water

Directions

Heat oil in a large pot. Add garlic and chicken and cook chicken through. Add spices.

Add tomatoes, salsa, chilies, beans and corn. Stir and bring to a boil. Simmer for 20 minutes. Raise heat and bring to a boil.

Mix cornstarch in water. Add to pot. Boil and stir a few minutes.

Serve with rice, corn bread or anything you want. Feel free to play around- add more beans, cilantro, change up the meat.

Makes 8 1 cup servings.
