Ingredients

    6oz can artichoke hearts
    1tbs olive oil
    12oz boneless skinless chicken breast cut up
    3 cloves garlic, minced
    1/4c low sodium chicken broth
    1tsp oregano
    7oz jar roasted red peppers
    1/4c black olives
    3c cooked wheat pasta (penne)
    1/4c crumbled low fat feta

Directions

1. Drain artichoke hearts, reserving liquid, and chop them. Heat oil in large skillet over med-high heat; add chicken and garlic. Stir and cook until chicken is brown. Add artichoke juice, broth, and oregano.
2. Bring to a boil; reduce heat. Simmer, covered, for 10 minutes. Stir in artichokes, red peppers, and olives.
3. Spoon chicken mixture over pasta and sprinkle with feta.
