Ingredients

    4-5 slices of bacon
    4 eggs
    3-4 slices of tomato cut up
    a pinch of shredded cheese
    Season to taste


Directions

Cut up 4-5 slices of bacon. Cook until almost done.
Add chop tomatoes. Cook about 2-3 minutes
Whip eggs with seasoning. Add water or 1% milk. (I added water.)

Cook until edges are brown and the outer edges are almost cooked. Fold over. Cook a few minutes more.

Cut in half and serve.

    Yummy! I warmed a cup of frozen spinach and added that to the bacon, cheese and tomato filling. - 3/26/10
