Introduction

This was passed on by my Italian friend. You cannot tell that these are made with extra lean turkey/meat combo--they are so delicious. They go a long way! This week I used them to make spaghetti for five people, meatball subs and meatball soup and still have a bunch left over. This was passed on by my Italian friend. Ingredients

    1lb extra lean ground turkey
    1lb extra lean ground beef (or you could just use 2lbs of extra lean ground turkey instead)
    3/4 cup seasoned breadcrumbs
    1 cup hot water
    1/2 cup grated parmesan
    2 eggs
    4 tbsp fresh parsley (2 tbsp dried is fine)
    1 1/2 tbsp minced garlic
    salt and pepper

Directions

Mix all ingredients except water. Slowly add splashes of hot water until the meat is sticky. If it doesn't feel sticky, keep adding more of the water (*shouldn't take more than 3/4 cup for this if you are using hot water as you should).

Make into 1-1 1/2" balls and place on sprayed baking sheets (*if you don't use regular ground beef instead of the extra lean turkey/beef, it is likely that grease will seep out and possible run over into your oven so I would use a dish with sides). The ball sizes won't expand very much at all so feel free to leave little space between them on the sheet.

Cover with foil and bake for 30 minutes on 350 degrees.

    That's great! My husband goes crazy when I make these meatballs. Isn't it funny how food can get them so excited!
