Introduction

I have taken out the one cup of oil this recipe calls for and substituted it with one cup applesauce and 2 TBSP milled flaxseed. They still have 130 calories each which I would like to decrease, but I have managed to reduce the fat to .9 grams per muffin. Ingredients

    4 eggs
    3 cups sugar
    1 cup applesauce
    2 cups canned pumpkin
    3.5 cups flour
    1 tsp salt
    1 tsp baking powder
    2 tsp baking soda
    1`/2 tsp cloves
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp allspice
    2 TBSP milled flaxseed
    2/3 cup water

Directions

Beat eggs, sugar and applesauce together until fluffy. Add 2 cups pumpkin to the egg mixture.

In separate bowl, stir together the flour, salt, baking powder, baking soda, cloves, cinnamon, nutmeg, and allspice, and milled flaxseed. Add your dry ingredients to your pumpkin mixture and stir. Then add 2/3 cup water and mix well. I use this recipe to make my children muffins. It makes approximately 36 muffins. Bake in 350 degree oven for 20 minutes.
