Introduction

All vegetarian and low sodium if you use low-so tomato sauce & bullion. Toss it all in the slow cooker and dinner is ready when you get home! Use as "meat" for tacos, burritos, taco salads or even on top of brown rice (none of which are included in the nutrition info).

Ingredients

    1 cup onion, chopped
    1 cup celery, chopped
    1 cup carrots, chopped
    2 cloves garlic, minced
    1/2 cup cilantro, coarse chop, firmly packed
    1 jalapeno pepper, chopped (or to heat preference)
    8 oz Low Sodium tomato sauce
    1 cup dried lentils, sorted, rinsed
    2 Low Sodium Veggie bullion cubes
    16 oz water
    1 TBS Chili powder
    1 TBS Onion powder

Directions

Makes 12 servings, approximately 3 oz or 85 g

After sorting and rinsing lentils, place everything into slow cooker.

Cook low 5-6 hours.

Stir occasionally.

Add water if necessary
