Introduction

Goes well with chicken, ham and pork chops or alone as a vegan dish. Add sage and pepper to taste. You can also substitue chicken broth for vegetable broth and balsamic for cider vinegar. Ingredients

    2 tsp olive oil
    1 large onion thinly cut
    1 large Apple shredded or thinly cut
    9 cups shredded cabbage
    2 cups shredded carrots (about 3 large carrots)
    2 tablespoons cider vinegar
    3/4 low sodium veggie broth
    1 tsp fresh sage

Directions

Saute onion, apple and sage. Cook, stirring a few times for 5 minutes. Add cabbage, carrots, vinegar and sesoning about 5 min. add broth and simmer 5 more minutes. Makes 4 servings.
